Sipping a cup of coffee is a daily act that millions of people make most of the world; a pleasant habit that encloses a universe of history, culture and age-old traditions.

The long process of transformation of this product from centuries-old tradition, can be divided into several steps:

Cultivation

This is the most delicate step, the lignifyed seedlings are bedded in the soil that later will house trees. They prefer rich and moist soils typical of the tropics, in temperate and cool areas with an altitude that varies among 0 and 1800 mt above sea level. For its location soil has to allow a quick drainage of water excess.

Harvesting

The fruits (called coffee cherry because similar to cherries) will appear not before three or four years. When the branches will bear grapes, it will take several months before they become ripe and of bright and warm red shades, now their name’s “drupes”. Important thing is the “drupes” hand harvesting that allows to select only the red ones and to leave out those that are not ready yet.

Processing

Once the coffee has been picked, it is prepared through several methods of processing in specialized centers called “Benefici”. Here beans are collected and prepared for trading. The quality of the coffee is determined according to the method used in this step.

Roasting

With this step a series of pyrolysis reactions occur, that stimulates the substances “responsible” later for the coffee taste. That’s why beans, collected in jute bags during their long journey, have neither taste or smell: just roasting will give them all features we’re used to identify in a good coffee.

Becoming a drink

Once your coffee’s roasted, the real trasnformation into finished sale product begins: beans, ground or instant coffee. The following packaging or further processing, like a bad roasting, represent a quite delicate step that might compromise the final success of drink itself.
